THE HARVEST
At present, the olive grove at Guinzano is producing 600 - 800 liters of delicious olive oil per year, entirely depending on the weather conditions. Most of the trees are still "teenagers" and have been planted only 14 years ago. Therefore, the annual quantity is expected to increase over time.
The harvest is done with the help of 8 friends from all over the world during the first two weeks of November each year. This early harvest time has the disadvantage of low oil contents but produces the highest quality possible.
The olives are hand picked and transported every evening to the nearby oil mill. It is essential that pressing is done on the day of picking in order to retain the very fresh aroma of our delicious oil.
100 kg of our harvested olives result in approx. 15 liters of olive oil.
